Ash Gourd Halwa / Kashi Halwa Recipe

Ingredients : 

3 Cup Ash Gourd/ Kumbalakai grated
1 Cup Sugar
1/2 Tsp Saffron
3 Tsp Ghee ( 1 Tbsp to Fry Cashew)
10 Cashew Nuts
1/2 Tsp Cardamom Powder

Method : 

1) Into a pan add in ash gourd. Cook till the ash gourd is cooked completely & water is absorbed.
2) now add sugar, saffron. Add Sugar according to your taste.
3) mix well till the sugar dissolves completely.
4) Boil until Sugar syrup thickens.
5) cook it in low flame until sugar syrup is absorbed completely.
6) Then add in 3tsp ghee & mix well.
7) keep mixing. Halwa absorbes ghee.
8) mix until absorbed ghee release from sides.
9)Finally add cardamon powder & mix well. at this stage turn off the flame & transfer the Halwa to a serving bowl.
10) heat another pan, into it add 1 Tbsp ghee. Once heated add cashew & fry until light brown.
11) pour it on top of the halwa.
